June 16, 2024 (SpillinhTheBeans)–Since I first arrived to Mexico in 1997 the La Selva coffee shop chain in Mexico City which sells coffee from the Cooperative of the same name deep into the Mexican rain forest highlands of Chiapas has been one of my favorite beans from the local market, and for years it was Nr 1 choice of beans to bring to friends and family as a souvenir.
A few years back La Selva started to experiment with a much darker roast – much to my regret and a few times when I had the opportunity I did let people at company headquarters know.
To my TOTAL DELIGHT the traditional La Selva perfect medium roast is back, and I couldn’t be more happy as to re-introduce it today as the perfect Sunday coffee.
So my Coffee of The Day today is one of my all-time favorites from Mexico, back in its traditional medium roast; Café La Selva’s incredible Peaberry blend from La Candona rainforest in Southern Chiapas State. Full bodied, medium to high acidity, rich chocolate notes which leaves a long lasting aftertaste lingering for hours after. Just beautiful, for close to 30 years now Café La Selva has never let me down with their impeccable quality consistency.
